In Camporosso there are some activities that deal with heliciculture, or snail breeding. This business has become very affordable for two reasons. The first is that Liguria is the Italian region in which more snails are consumed for food purposes. The second is that many cosmetic and pharmaceutical products are made with snail slime. Putting on a slug slack, however, is no joke. The initial investment is substantial as nets and fences are needed. In addition, it also takes a lot of work to always keep the fields clean. The cycle of a snail, before it can be sold, is one year. In this period, the largest snails, the mothers, spend time in breeding pens, where they lay 40 to 80 eggs each. Before being sold, the snail is then purged for 15/20 days. This happens if you sell it for food, restaurants and private individuals. Then it is cooked in a sauté, with tomato flavored with mint. If, on the other hand, the drool is obtained, it can be extracted throughout the year except during hibernation.
